Pumpkin marmalade is a healthy and completely natural dessert that you can make with your own hands. It's not at all difficult to prepare. Most of the time will be spent just for the marmalade to fix its shape. So, let's start cooking.

There are a great many varieties of pumpkin, but when making homemade marmalade, your choice should be nutmeg varieties. These vegetables are distinguished by very bright, dense and aromatic pulp. If you use nutmeg pumpkin, then due to its natural sweetness, you can add less granulated sugar to the dish.

Before cooking, the pumpkin should be washed thoroughly, preferably with soap, and then peeled and cut into pieces. The size of the slices depends on what kind of heat treatment you are going to subject it to before pureeing. There are several options:

  • Bake in the oven. In this case, the pumpkin can be cut into sickles, with a base thickness of 2 - 3 centimeters. The pieces are placed on a baking sheet and baked in the oven for 35 - 40 minutes at a temperature of 180 - 200 degrees.

  • Steam in a double boiler. To do this, cut the pumpkin into cubes, approximately 3 by 3 centimeters. Pour water into the steamer and cook the vegetable for 25 - 30 minutes. If you don’t have a steamer, you can use a special steaming container and boil the pumpkin in a regular saucepan or slow cooker.
  • Boil pumpkin in water. In this case, the vegetable is also cut into cubes, poured with water so that the liquid covers the pieces halfway, and cooked under the lid for 15 - 20 minutes.

Grind the softened pumpkin in a blender until smooth. This process is one of the most critical in making homemade marmalade, since unchopped pieces of vegetable that may be found in the finished dish can ruin the entire positive impression.

Natural pumpkin marmalade recipe

  • pumpkin – 1 kilogram;
  • sugar – 400 grams;
  • lemon – ½ piece.

Add sugar to the pumpkin puree and simmer the mixture for half an hour over low heat, remembering to constantly stir the pumpkin.

After this, add freshly squeezed lemon juice to the pan and boil the marmalade for another 10 minutes.

Attention: Boiling pumpkin puree has the property of “spitting out” a hot mass!

While the workpiece cools slightly, prepare a form in which the marmalade will dry. This can be a flat tray or a baking sheet with high sides. To prevent marmalade from sticking to the walls, cover the container with parchment or thin cling film. Silicone molds are simply greased with vegetable oil.

The puree is poured into the mold in a layer of 1.5 - 2 centimeters, no more. Dry the marmalade in the oven until the mass becomes elastic and a dense crust forms on top. The oven heating temperature should be minimal.

You can dry marmalade at room temperature. To do this, the tray, without covering it with anything on top, is left warm for 5 - 7 days.

The finished marmalade is placed on a plate, cut into portions, and sprinkled with sugar or powder.

Gelatin marmalade

  • pumpkin – 1/2 kilogram;
  • granulated sugar – 200 grams;
  • vanilla sugar – 1 sachet;
  • gelatin – 20 grams;
  • water – 50 milliliters.

The gelling powder is soaked in water for 10 - 40 minutes, depending on the instructions in the instructions. Then the swollen mass is poured in, and hot pumpkin puree mixed with regular and vanilla sugar. The hot mass is intensively stirred until the gelatin crystals are completely dissolved and placed in pre-prepared molds. If portion forms are used, for example, for making ice cubes, then they are pre-lubricated with vegetable oil.

Other options for making pumpkin marmalade

In order to make the taste of marmalade unusual, you can use the following techniques:

  • Boil pumpkin pieces with an apple, banana, pineapple or any other fruit. At the same time, pumpkin puree will sparkle with completely new flavors.
  • You can add spices to the pumpkin mixture: cinnamon, anise, nutmeg, vanillin or cardamom.
  • Pumpkin marmalade can be dyed into other colors using food coloring.
  • Instead of lemon juice, you can add orange juice or orange-lemon mix to natural marmalade.

In our country, it is customary to drink a lot of tea, and sometimes you want something sweet and light with it, but not everyone likes ordinary cookies as a pleasant addition to a hot drink. In my family, it is customary to drink morning tea with homemade marmalade, tender and low-calorie, which also goes well with baked goods and ice cream.

There are an incredibly large number of types of marmalade, but one of my favorites is pumpkin marmalade, the old Soviet recipe of which was undeservedly forgotten, but received a new life in our family thanks to my grandmother, who managed to make the preparation process quick and the final product delicate and delicious.

This type of marmalade is prepared in two versions - with and without the addition of gelatin, on agar or pectin - this is suitable even for vegetarians. We will discuss the differences in detail below so that you can choose the most convenient one for yourself.

Real, homemade marmalade contains polysaccharide, excellent for cleansing the stomach and intestines. In addition, the ancient Egyptians used this delicacy as a cure for kidney diseases.

Classic option

Preparation time: 30 minutes.

Kitchen appliances: prepare 2 pans with a capacity of at least 1000 ml, a baking tray or a large square mold, baking paper, tablespoons and teaspoons, deep bowls with a volume of 500-800 ml, a whisk, a grater, a colander, a glass mold for ready-made marmalade with a volume of about 500 ml, measuring dishes or scales and a blender to make it easier to mix the marmalade mixture (you can use a whisk or spoon).

You will need

Choose only fresh pumpkin that is bright orange in color so that there are no dark or rotten spots on the surface of the skin. Any type of pumpkin is suitable for marmalade, but nutmeg or sugar pumpkin is preferable.

The marmalade is completely ready! You don't have to cut it into squares: sometimes I just roll the marmalade into balls and you can shape it into whatever you want. However, do not make the pieces too large as they will be too fragile.

See the detailed recipe

In this video you can see how to properly cook and form marmalade:

However, let's go back to the kitchen, as that's not all. The second version of pumpkin marmalade is made with gelatin and is faster, so let's get started right away.

Option with gelatin

Cooking time: 40 – 60 minutes.
Number of persons: 5 – 8.
Calorie content per 100 g: 200 – 250 kcal.

You will need

  • 500 g fresh pumpkin;
  • 150 g sugar;
  • 50 g gelatin powder;
  • 8 – 10 g vanilla sugar;
  • 1 table. l. powdered sugar.

Vanilla sugar can be replaced with ordinary vanilla or essence. You will need one level teaspoon of both.

Cooking sequence

Your quick marmalade is ready! There is only one question left: how else can you decorate pumpkin marmalade? The choice is small, since standard decorations simply will not stick to pieces. However, there is a way out: instead of powdered sugar, you can sprinkle the finished marmalade with coconut flakes, previously crushed into dust using a coffee grinder or blender.

Also, my mom sometimes melts some dark chocolate and puts little chocolate chips on the top of the jelly cubes. In general, use your imagination, and everything will be delicious and beautiful!
