I love zucchini in any form. Even raw, it’s also delicious if you pepper it, rub it a little with garlic, sprinkle it heavily with herbs and sprinkle with, say, lemon juice. But this time I decided to cook this low-calorie vegetable differently...

This can be an independent dish, an appetizer, or a side dish. It turns out not only tasty, but also beautiful. That’s why, when guests come to my house and there’s nothing special to serve, I come up with something like this appetizer. Swept off the table in the blink of an eye!

Cooking time: about half an hour, if in the proportion that I served

Complexity: you can just fry it, but here, as they say, with a little heat...

Ingredients

    3 tbsp. l. vegetable oil

    salt to taste


Cooking method

We don’t clean a young zucchini, otherwise we’ll end up with mush. And from a rough one, you can remove the skin (but not too thick) and select the seeds (as was the case in my case). Then we need circles about a centimeter thick.

These are not eggplants, but I add some salt before frying. Let the excess moisture drain, then the circles will be crispy. And if you don’t do this, the zucchini will be steamed.

I like garlic not the kind with cloves. There is such a variety (alas, I don’t remember) when such a decent head comes. Or take a large head. Separate the required amount, clean it - we will need juice.

The filling is tomato, therefore the tomato (ripe!) must be doused with boiling water, and then, when it cools down, remove the peel from it.

Now you can put the frying pan on gas. I like to fry with as little oil as possible. Let the zucchini turn golden.


The tomato should be cut into 4 parts.

Select the seeds from there and chop them very finely.


What's with the garlic? We need to squeeze the juice out of it. How much should I take? A matter of taste. After all, they need to water the zucchini.

Don’t forget to place the finished zucchini on a napkin - let the excess fat come off. And immediately put it in a plate.

While frying, fry the chopped tomato in a small amount of vegetable oil. Stir frequently so that it does not burn or go out completely.

Pre-Columbian Indians are said to have eaten squash, along with squash, beans and corn, for thousands of years. Zucchini grows well next to other crops. After zucchini was brought to Europe, it was more often used as an ornamental plant, and only the seeds were eaten.

  • Peel the garlic and chop it with a knife as finely as possible. You should not grate it, otherwise there will be a lot of garlic juice. The amount of garlic is to taste.

  • Mix all ingredients in a salad bowl and pour over the remaining oil after frying. Salt and pepper the zucchini and tomato to taste.

  • Gently toss the salad. Zucchini and tomato - a quite tender appetizer.

  • More recently, I was skeptical about dishes made from this vegetable, except that caviar was a favorite appetizer, but after I tried it with dill and garlic, I changed my mind and now with great pleasure I eat zucchini in any form, and appetizers from fried zucchini became a regular feature on our family table.

    For this dish you need:

    • 2 young zucchini
    • 1 head of garlic
    • Mayonnaise
    • Vegetable oil

    Preparation:

    For this dish we use young zucchini; you can also cook zucchini using the same recipe.

    We wash them, cut off the ends, cut them into thin circles, 3 - 5 millimeters thick, if they turn out a little thicker, it’s not a big deal, fry them a little longer

    You need to add a little salt and mix with salt, be careful, don’t add too much salt, don’t forget that you will have them with mayonnaise

    Heat the vegetable oil in a frying pan, dip each cut piece in flour on both sides and lay it out to fry. It is recommended to fry over medium heat so that the oil and flour do not burn and your kitchen does not fill with an unpleasant smell.

    As soon as the pieces begin to brown on the bottom, carefully use a fork to turn them over to the other side, keep in mind that they fry faster on the other side, so be careful not to burn them

    Now we peel the head of garlic, squeeze all the cloves into a bowl through the garlic clove, if there is no garlic clove, you can chop it very finely with a knife

    Place the second piece on top and also grease it. If you are preparing such an appetizer for guests, you can garnish with small slices of cucumber, tomatoes, and dill.

    To prepare you need:

    • Zucchini
    • Sour cream
    • Garlic
    • Pepper

    Preparation:

    Cut the zucchini into round pieces, about 1 centimeter thick, and at the same time put a saucepan with vegetable oil on the fire to heat up.

    Add salt to the flour, mix and roll the pieces of zucchini on both sides, place them in a saucepan and fry on both sides

    I must say that sour tomatoes are simply made for fried zucchini. Moreover, with cheese and garlic it turns out to be a mind-blowing dish! All fingers are licked. Therefore, prepare more, otherwise usually a snack with a standard set of ingredients is eaten at one time.

    We need:

    • Zucchini - 4-5 pieces;
    • Tomatoes - 4 pieces;
    • Mayonnaise - 100 grams;
    • Garlic - 0.5 heads;
    • Chicken egg - 3-4 pieces;
    • Grated hard cheese - 100-150 gr.;
    • Greens (dill, parsley);
    • Flour for dredging;
    • Salt, pepper - to taste;
    • Vegetable oil for frying.

    Preparation:

    1. Wash the zucchini under water and cut into rings 1.5 cm wide.

    If the vegetables have a thick skin, then it must be removed. It is rough and will be unpleasant to eat later.

    2. Place the mugs in a bowl. Salt and pepper a little to your taste.

    3. Wash the garlic cloves, herbs and tomatoes. Leave the parsley aside for decoration.

    4. Chop the tomatoes into thin rings.

    Oh, and this is one of my favorite recipes. I cook using it when I get lazy. And my family wants zucchini with garlic. I save my energy by baking vegetables directly in the oven. And you don't need to stand over the frying pan. Try it too, because in 15 minutes you get yummy parmesan cheese!

    We need:

    • Zucchini - 1-1.2 kg;
    • Grated Parmesan - 70 g;
    • Vegetable oil - 1-2 tbsp. spoons;
    • Dry garlic;
    • Provencal herbs.

    Preparation:

    1. Wash the zucchini under the tap and prepare the other ingredients. When you prepare everything at once and the process goes easier, doesn’t it?

    2. Shred the vegetables into rings. Place them in a deep bowl and salt them well. Mix with your hands and leave for 15-20 minutes.

    3. During this time, excess moisture will come out of the zucchini. We remove it with a paper towel as in the photo below.

    4. Turn on the oven to preheat at 220 degrees.

    5. Line a baking sheet with foil. Lubricate it with vegetable oil. This can be done using a silicone pastry brush.

    6. Lay out the zucchini rings in an even layer.

    7. Sprinkle dried garlic on top of them. Add dried Provençal herbs on top.

    Here's a very simple recipe. The zucchini turns out spicy and very tasty. Even vegetarians or people who fast can eat the dish. All due to the fact that the recipe does not include animal products.

    We need:

    • Zucchini or zucchini - 1 kg;
    • Greens (dill, parsley, cilantro);
    • Olive oil - 1.5 tbsp. spoons;
    • Garlic - 4-5 cloves;
    • Salt, pepper to taste;
    • Oil for frying.

    Preparation:

    1. Cut the zucchini or zucchini into rings or half rings. If the vegetables are thick-skinned, then remove the skin from them.

    Take a flat-bottomed frying pan or grill, put a regular one on medium heat and pour a teaspoon of oil, grill over high heat and do not pour oil. When the pan is very hot, add a layer of zucchini and add salt if necessary.

    Fry the zucchini for about 3-4 minutes until they become golden brown on one side, covered in a regular frying pan and without a lid in a grill pan. While the zucchini is roasting, make the garlic sauce. Finely chop a couple of sprigs of dill. Put it in a gravy boat , low-fat sour cream or yogurt as desired.
