How to make fluffy cheesecakes recipe. Cottage cheese pancakes in a frying pan - classic recipes for fluffy cheese pancakes

Even such a simple dish as cheesecakes cannot be prepared without knowing some culinary secrets.

  1. For ideal cheesecakes, you need fresh cottage cheese with a uniform texture, without sourness, with a fat content from 7 to 18. If the cottage cheese is a little dry, add a little sour cream to the dough. If the cottage cheese, on the contrary, is wet, put it in a colander and let the liquid drain.
  2. Eggs and flour are ingredients that should not be in abundance. When there are more eggs than needed, rolling the dough into flat cakes becomes problematic. And excess flour makes cheesecakes “rubbery”, depriving them of softness.
  3. To get a dietary version of cheesecakes, add only egg whites to the dough. But you cannot use low-fat cottage cheese, otherwise the dish will definitely not turn out tasty.
  4. Don't add too much sugar. If the cheesecakes turn out not sweet enough, this can be easily corrected with honey, condensed milk, syrup or jam.
  5. Ideally, for one cheesecake there is enough dough to fit into a tablespoon.

A few important points when creating this dessert will help you make the most delicious cottage cheese pancakes.

  • Cottage cheese is the main and important component of the dish. He is given special attention. The base should be well wrung out, without excess moisture. • Cheese pancakes are fried in high-quality hot vegetable oil. In some dietary recipes, frying is replaced by baking in the oven or steaming.
  • Common variations of the dish are simple cheesecakes or products with raisins. Fruits (apples, dried apricots, pears), vegetables (carrots, potatoes), and herbs (green onions, dill, parsley) are often added.

Lush cheesecakes made from cottage cheese, the recipe with step-by-step photos of which you will see below, is an excellent dish not only for breakfast, but an excellent option for an afternoon snack or snack at any time of the day. Tasty, satisfying and healthy! And it’s also less caloric than drinking the same tea with candy or chocolate.

In order for the cheesecakes to turn out fluffy and come out of the pan well, you need to take into account several features. Mainly - use baking powder and choose the right consistency of the dough. If there is too little flour, the cheesecakes will spread, and if there is too much, they will be too dense and not so tasty.

Lush cheesecake recipe

Ingredients for 10 medium cheesecakes:

  • cottage cheese - 400 g
  • sugar - 3-5 tbsp. (or to taste)
  • salt - 0.5 tsp.
  • eggs - 1 piece
  • baking powder - 1 tsp.
  • flour - 1 cup (125 g) for dough + 50 g for breading
  • refined vegetable oil - 2-3 tbsp. for frying

Preparation:

The first thing you need to do to make the cheesecakes fluffy is to rub the cottage cheese - either through a sieve or through a colander with small holes. Another option is to use a blender.

I placed a colander on a convenient dish and rubbed the cottage cheese with a spoon.

I prefer to cook with paste-like cottage cheese, which is sold in packs. That’s why I bought the same one for cheesecakes.

If you only have coarse dough, or you prefer it, then you can knead the dough from it. But you will most likely need less flour. Or you can take not one egg, but two.

Mashed cottage cheese is tender and airy. This is the best basis for fluffy cheesecakes.

I broke an egg here.

Added salt and sugar.

The amount of sugar can be changed to decrease or increase according to your own taste.

Gently stir the mixture with a spoon. No need to beat! Otherwise, you won’t get lush baked goods. But sugar and salt must dissolve.

Mix a glass of flour (125 grams) with a teaspoon of baking powder. Sifted and added to the curd mass.

If you have taken grainy or simply rather dry cottage cheese, then add not all the flour at once, but little by little, in portions.

Kneaded the dough. It should be neither liquid nor steep - quite thick, but sticking to your hands.

Airy and tender cheesecakes (cottage cheese) are not difficult to make. This popular morning breakfast is not only delicious, but also healthy. After all, the main component of cheesecakes is cottage cheese. This product has a lot of elements important for the human body.

Cheesecakes contain the following healthy elements:

  • Squirrels- as a result of the fermentation process, casein protein coagulates, which improves digestibility.
  • Minerals- such as phosphorus and calcium, these are exactly the materials that are indispensable for strengthening the heart muscle and building bone and teeth tissue.
  • Amino acids- tryptophan and methionine, which protect the liver, have hematopoietic properties, normalize biliary functions and have a beneficial effect on the nervous system.

There are many available cottage cheese recipes used by housewives. Let's look at some of them.

Ingredients:

  • 0.5 kg of cottage cheese;
  • 2 eggs;
  • 3 tbsp. spoons of flour;
  • 2 teaspoons sugar;
  • salt;
  • slaked soda;
  • vegetable oil.

Cooking method:

  • Mash fresh cottage cheese well with a fork so that there are no lumps;
  • add flour, salt and soda;
  • mix thoroughly again;
  • Lastly add the eggs beaten with sugar.

You can use a kitchen appliance, a blender, which is now popular in the household, to mix all the ingredients.

The curd dough is ready. Now you need to make round balls, roll them in flour, flatten them a little and place them in a hot frying pan with vegetable oil.

Cheesecakes on yolks

In most cases, eggs along with white and yolk are used to make curds. Often, only egg whites are used, whipped into a thick foam. And in this recipe we will consider using only yolks, which, however, must first be thoroughly beaten.

Ingredients:

  • 2 packs of fresh cottage cheese;
  • 5 eggs - yolk only;
  • 2−3 teaspoons sugar;
  • 4 tbsp. spoons of flour;

  • add soda, flour and sugar to the cottage cheese;
  • mix again;
  • form into balls and fry in hot oil.

There are several useful tips that will help you prepare delicious cheesecakes:

  1. You can get high-quality cheesecakes only by using fresh cottage cheese in cooking, with a fat content of 5% or more; the best cheesecakes are made from 18% cottage cheese.
  2. There is no need to add a lot of flour to the curd dough; the resulting cheesecakes will taste like pies.
  3. A breakfast of too wet cottage cheese will spread in the frying pan. In this case, you need to increase the amount of flour, but this will spoil the taste of breakfast.
  4. Do not add excess sugar to the dough, as it will dissolve during mixing and make the curd dough liquid. The cheesecakes will turn out, but they will not be fluffy, and the shape will resemble pancakes.
  5. Cheese pancakes that are too sweet are made when you plan to eat them not with jam, condensed milk or honey, but with sour cream. If there is not enough sugar, it is better to add it to a ready-made breakfast, for example, in the form of powder.
  6. Original cheesecakes are made by using granular cottage cheese. But it is better to avoid using curd mass with various flavoring additives, and a product called “curd product” is not suitable at all.
  7. Before adding eggs, many housewives prefer to beat them into a thick foam. This is absolutely correct. Moreover, even if all the ingredients are mixed in a blender, the eggs must be beaten separately and added last.
  8. Baking powder can be replaced according to the old tradition with soda on the tip of a knife, but this will also worsen the taste of the product. But adding vanillin to the composition is highly recommended.
  9. You can cook cottage cheese not only in a frying pan, but also in the oven on a baking sheet. In this case, they do not need to be turned over, but before putting them in a preheated oven, brush them with egg or sour cream.
  10. Cheese pancakes are cooked in a frying pan and in the oven for approximately the same time, 15-20 minutes.
  11. Don't be afraid of your fantasies. You can safely add fresh apples, raisins, bananas, and cinnamon to properly prepared dough.
  12. The use of cinnamon will change the snow-white or lemon color of the cottage cheese, so it is better to sprinkle it on top of the finished product or add it to jam, honey, or sour cream.

Start your morning with a healthy breakfast, and you will be in a good mood all day. Bon appetit!
