Casserole of potatoes, mushrooms and minced meat in the oven. Potato casserole with minced meat and mushrooms in the oven recipe with sour cream

From the simplest ingredients you can prepare a delicious and even festive dish. But in order for the potato casserole with mushrooms and minced meat to turn out juicy on the inside and with an appetizing crust on the outside, you need to know a couple of culinary tricks.

It is important to choose the right minced meat for the filling. Pork or assorted pork and beef is ideal - the filling will be very juicy and will completely saturate the entire casserole. If you prefer less fatty meat, go for rabbit or nutria. The minced chicken will be the driest, so add more vegetable oil and onion to make it juicier.

As for mushrooms, take champignons, oyster mushrooms, honey mushrooms, chanterelles or boletus mushrooms. Do not cut them too finely so that they do not burn during frying and also do not get lost against the background of the minced meat. Pay special attention to preparing mashed potatoes. The potatoes should be slightly overcooked, soft and crumbly. To add a sweetish taste, add butter or cream to the puree. And so that the casserole of potatoes with minced meat and mushrooms in the oven acquires a beautiful “blush”, be sure to add a fresh chicken egg.

Ingredients

  • potatoes 300 g
  • champignons 100 g
  • minced beef and pork 200 g
  • salt 1 tsp.
  • butter 30 g
  • chicken egg 1 pc.
  • vegetable oil 1 tbsp. l.
  • onion 1 PC.
  • mixture of ground peppers 2 wood chips.

How to cook potato casserole with mushrooms and minced meat

  1. First, prepare mashed potatoes. Peel the tubers, rinse and cut them into quarters. Fill in cold water so that it completely covers the potatoes. Place the pan on the stove, bring to a boil and only then add salt. Cook for 20 minutes from the moment of boiling - you can even “overcook” it slightly for greater crumbliness.

  2. While the potatoes are cooking, prepare the casserole filling. Heat vegetable oil in a frying pan and sauté diced onions in it. As soon as the onion becomes transparent, add sliced mushrooms to it.

  3. When frying over high heat, after 5-7 minutes the champignons will lose moisture and become a beautiful golden color. Add minced meat to them, mashing with a fork so that there are no lumps.

  4. Fry the minced meat until cooked through - about 7-8 minutes. At the very end, add salt and pepper to taste.

  5. Drain all the liquid from the boiled potatoes. Puree it and then add a knob of butter and an egg (make sure the puree is warm, but not too hot!).

  6. Grease an ovenproof dish with butter and place half of the mashed potatoes on the bottom.

  7. Spread the mushrooms and minced meat on top in an even layer, lightly pressing them with a spoon.

  8. Place the remaining puree over the filling - to do this, simply smooth it out with a spoon or lay it out beautifully using a pastry bag with a molding attachment. The potato layer must completely cover the meat, otherwise during baking it will dry out and lose a lot of moisture.
  9. Place the pan in the oven and bake at 200 degrees for 20-30 minutes.
  10. As soon as the potato casserole with minced meat and mushrooms gets a golden brown crust, remove it from the oven and serve. Complete the dish with fresh seasonal herbs, vegetables and sour cream.

Potato casserole according to this recipe is not difficult to prepare, and most importantly - quickly enough, and you will have time for other household chores. So, let's start cooking.

First, I thoroughly wash and cut the mushrooms into medium slices. Then I don’t waste time and immediately put the mushrooms on a pre-heated frying pan. Don't forget to add some oil to the pan.

Immediately put it on the fire and simmer until half cooked with the lid closed. I prefer to simmer the mushrooms for a long time, and if they start to burn on the pan, I add a little water and continue to simmer. The total cooking time for mushrooms takes me about 20 minutes.

I cut the onions and add them to the already lightly stewed mushrooms.

I simmer the mushrooms and onions for another 5 minutes under the lid closed, adding salt.

Next I move on to the minced meat. For its fragrant and tasty potato casserole I use store bought Ground beef. If you prefer homemade minced meat, then grind the meat through a meat grinder and add onions and spices if desired.

I defrost the minced meat completely. I put it on the frying pan. Salt and fry in oil for 15 minutes.

Peel the potatoes and cut them into thin slices. I put half the potatoes in a baking dish. I add a little salt.

I place mushrooms on top of the potatoes.

I'm preparing the sauce for the topping. I chop the garlic through a grater and mix it with sour cream. Whisk thoroughly and pour over the mushrooms, carefully leveling.

Place the other half of the potatoes on top. Salt to taste.

I put the pan with potato casserole with minced meat and mushrooms in the oven and bake for about 30 minutes at temperature conditions at 200 degrees.

After 30 minutes have passed, I take the casserole out of the oven and check it for doneness. I rub the cheese and sprinkle with cheese.

Place it back in the oven and bake until the cheese is completely melted. Potato casserole with minced meat, cheese and mushrooms is ready.

Cool the dish slightly and serve. I prefer to serve the casserole with a fresh vegetable salad or vegetable appetizer. It turns out to be a very tasty and satisfying dinner.

  • 150 g cheese;
  • 400 g minced meat;
  • 2 cloves of garlic;
  • 3 tomatoes;
  • spices;
  • 3 tablespoons of oil.

How to cook

Minced meat in this casserole is used raw. Just season it with spices, crushed garlic, and stir.

We cut the mushrooms and fry them a little to improve them taste qualities, enhance the aroma. We also add salt, but after cooking. We don’t do this in advance so that water doesn’t appear in the pan.

Cut the washed zucchini into half-centimeter circles. Place half on a baking sheet. Lightly grease with sour cream, only one spoon should be left, do not add salt. Distribute on top raw minced meat, and then mushrooms.

Place the remaining zucchini and sliced tomatoes on top of the filling. We put it in the oven. Cook vegetables with mushrooms and minced meat at 180 degrees for 35 minutes. It is important not to sprinkle the zucchini with salt. Let the juice boil away from them, and the casserole itself will get stronger.

The sour cream that we have left needs to be well salted, since the zucchini was not seasoned with anything. Pepper and any other spices are allowed. Grate the cheese coarsely. Take out the zucchini casserole, brush with sauce, and cover with cheese. Cook for another twenty minutes.

You can not spread the minced meat over the zucchini, but roll it into small meatballs and simply scatter them mixed with pieces of mushrooms.
