Three tbsp. l. flour;

L. Art. Dijon mustard;

Half a lemon;

Half a bunch of dill;

0.1 kg capers;

Ground pepper;

Four cloves of garlic;

Three gherkins;

70 grams of dry wine.

Cooking method:

Cut the prepared squids into small pieces and leave them in a colander to let the excess water drain out.

Separate the yolks from the whites and place them in the mixer bowl. Add Dijon mustard and turn on the kitchen assistant for thirty seconds. Add vegetable oil, squeeze lemon juice, add salt and sugar. Let's turn on the mixer for another fifteen seconds.

Pour the contents into a blender and add finely chopped dill.

Chop the capers, crush and chop the garlic. Place both ingredients in a blender.

Finely chop the gherkins. We will also pour them into a blender.

Pour dry wine and turn on the blender for half a minute. It turned out to be a wonderful sauce.

  • To make the squid softer, you need to beat it. To do this, you can use a frying pan - wide and flat. Cover the squid with baking paper and gently beat it. You can also use a hammer, but using a frying pan is faster.
  • It's a good idea to prepare the squid for a quick cleaning and marinate it at the same time. To do this, pour three liters of water into a saucepan and add three tablespoons of apple cider vinegar, a spoonful of vegetable oil and sugar. Add salt and pepper. Bring the marinade to a boil as quickly as possible. The squid drowns in it. After a few seconds, remove the saucepan from the heat. The squid is filled with cold water and cleaned.

Thawed squid look very unsightly: they are slippery and, frankly, ugly. But you just have to cook them properly and that’s it... You won’t be shocked by the ears.
