Cooking steps

Step #1. In order for the bird cherry pie to be fluffy and airy, you need to knead the yeast dough using one of the most popular methods. The recipe for this test is simple. The main thing is to choose the right yeast. It doesn’t matter what they are: dry or fresh, you won’t feel much difference. True, with fresh yeast the pie with bird cherry and sour cream will be more aromatic. Do everything sequentially, according to the recipe.

So, in a deep bowl, mix yeast, sugar, warm milk (but not hot!). This will be the dough for the pie. Leave the mixed ingredients alone for 10-15 minutes.

Step #2. Break the egg into a separate bowl, add melted butter, salt, and vanilla sugar. Whisk all this well until smooth. Now add this mixture to the dough and stir. Adding flour little by little, knead the yeast dough for the pie. Remember - it must be without lumps.

Step #3. When you knead the dough, cover it with a napkin or towel and send it to a warm place. Let it rise until it doubles in volume.

Step #4. While the dough is rising, you can proceed to preparing the filling. The proposed recipe can be used with any of the bird cherry jam options.

Option one. Well, if you find ground bird cherry somewhere, then you can do it faster. Just pour hot milk over the bird cherry powder, add sugar and, stirring, cook the resulting mixture for three minutes. Then leave it for a while so that the bird cherry steams.

Option two. However, if you can’t find ground bird cherry, or you want to use fresh berries, then we will share with you simple recipe bird cherry jam. Rinse the berries thoroughly and dry them (it is necessary to drain excess liquid).

As soon as the bird cherry berries are dry, pass them together with the seeds through a meat grinder two or three times. Under no circumstances should you grind bird cherry in a blender; do it exclusively with a meat grinder! The more times you pass the minced meat through a meat grinder, the more tender it will be.

When the bird cherry mince is ready, just like in the first option, pour hot milk over it, add sugar and cook for 3 minutes over medium heat. Don't forget to stir so the jam doesn't burn. After the specified time, remove the pan from the heat. The bird cherry jam recipe has come to an end. All that remains is to let the future filling stand and swell.

Step #5. Add egg and curd cheese to the cooled milk-cherry mixture. Mix everything with a whisk until smooth, and then proceed to preparing the pie for baking.

Step #6. Take any mold with a diameter of 24-25 cm, place the suitable yeast dough into it, forming high sides. Pour the filling on top of the dough. According to the recipe, after this step you need to put the mold in a warm place for half an hour.

Step #7. Now place the bird cherry pie in an oven preheated to 200 degrees and bake it for about 45 minutes. Then remove the pan from the oven and leave the cake to cool.

Step #8. Then start preparing the sour cream. His recipe will seem simple to you, but believe me, the cream will be very tasty! Mix full-fat sour cream with powdered sugar. Make sure there is no starch in the powdered sugar! Then whisk the mixture and place it in the refrigerator to thicken.

Step #9. When the pie has cooled, remove the cream from the refrigerator and generously brush the pastry with the sour cream mixture. Don't skimp on the cream! Then the cake will turn out tender and soft. You can decorate it with mint leaves or bird cherry berries - there are already limitless opportunities to show your imagination, although the recipe itself does not need any additions, because the pie already looks very appetizing!

The pie is ready! If you did everything consistently, then baking according to our recipe is simply bound to work out.
